Of the several different insurance companies I checked with, they required a picture of the vehicle in question, in the locked garage. That pretty much rules out a tarp shed, or open barn.

As far as the year thing, they will most likely want you to provide something from the DMV to prove you own the vehicle, so the year is disclosed officially.

They also generally have you sign an affadavit stating that this isn't your primary vehicle,and require that you give proof that you also own other vehicle(s) and they are covered by insurance as well.

If you don't want these limitations, the only option is to bite the bullet and tag and insure the truck as a "truck" and not a collector vehicle.
