I've got a 91 GMC Sub that I've been thinking of doing just that type of thing to. OK, the interior won't be correct, cause I've got four captains chairs, but it does have rubber floors. IT IS a gasser, but I could drop in a multifuel turbo diesel. It's already got a 40 gallon fuel tank. I guess it would need a better fuel pump. But then I would be ready. Of course, if I really wanted to do it correctly, find a deuce that's not worth restoring and strip all the necessary parts, like engine, axles, etc and away you go.

The wife would NEVER understand....
