When I used a pallet jack to pull off, put on tire/rim combo's, I just let it balance on the jack. It wasn't too big of a deal.
A quick down n dirty way would be to just weld an upright to the hump of the jack and strap it to that.
If no one has mentioned it yet, be careful with your boost pressure. Its been stated that with stock head bolts, 15psi is about max boost. If you run close to 15psi often, you might look into head studs to minimize head gasket issues.
