The NVA (East German Army) colors are listed here (page in German): http://www.panzerfreund.de/forum/jgs_portal.php?id=59. The base color for all their schemes is RAL6003 green.
Just a roofhatch / manhole, theres two of them, one for the commander and one for the back seats behind the driver. No special gun mounts there, and I doubt the thin sheetmetal roof would appreciate one either ;)
Looks good, where did you get the lower suspension bracket? I got used on hitting my head on the ceiling on fast bumps by now, but maybe I allow myself the luxury of a lower seat some day too :)

Yeah, the 3 connectors at the rear wont work: Yellow (was actually blue on mine) is brake command, red is brake supply with the one-way valve, and the 3rd one (mounted slightly lower) is for connecting single-hose trailers (an old system).

Are we talking t813 or t815? On the 813 there is a connector on the air pressure regulator at the right side of the rear bumper. I'm not sure if you can fill the truck using that connection though, I recall there is a one-way valve in there.
Your best option would be to use the trailer gladhand...

On the valves: up is open, down closed. Use only one tank at a time and open both feed and return valve on the same side, otherwise you will pump fuel between the tanks. Left tank has an extra fuel return line without a valve, this is the overflow from the injectors.

Dont buy MAN for offroading. MAN is nice for high speed "semi offroad" / "unpaved", but its not an offroad vehicle. Tatra is. Then, a MAN 4x4 uses the same amount of diesel as a Tatra 813 8x8. Tatra has the 7-seat 4 door cab, MAN has a 4-seat 2 door cab. Spare parts for Tatra are a lot cheaper...
