Welcome to the Outfit!
Since you have been reading, I'm sure you have see the word "TM" mentioned. We do have the Technical Manuals hosted here, so be sure to download those. And like @glcaines suggested - We Need Pictures! - please.

PirTek is a vendor that will repair hoses with a little van that runs around town repairing hydraulic hoses. I have had them show up at my place and repair or replace hoses on my hydraulics and on air conditioning on big green trucks.
They have also accepted hoses from me at their office...

I would imagine that there is a section of the TM's that explains the cab tilt process. The thing to do - book or not - is to be sure that you manually block the cab in the raised position. We had one of our members get caught with his head between the cab and the motor. Almost lost him...

I definitely wish the Hydraulic Table that we had when I rebuilt cylinders every day was here in my building... Much faster and easier than struggling to do it by hand. Of course I wasn't in that business at the time. Just a technician back then.

Wow! Sounds like a pretty decent deal - and ESPECIALLY with the hydraulics functional straight off the trailer. Most of your problems sound like they will be easily fixed.
Congratulations!

You shouldn't hesitate to get yourself a bore hone like you would use on an engine block. They come in assorted sizes. The knurled nut on top will add more spring tension. Add some grit to the hone stones if the rust is really bad. Use liquid (penetrating oil will work) to keep from...

That valve has a little rubber disc and a couple of O-Rings inside. It could be that "the creeping crud" got inside it and cleaning it will make it better. BE CAREFUL when you take it apart because there is a little spring that holds the disc in place and you don't want to lose it. It is...

It might be worth a trip to a line shop and have a foot or so cut off and replace the hose ends. There are "skive" hose ends that allow you to do that at home (in your shop) too if you spend the time to find them.
Much better than scrapping all 20/30 feet...

Your idea of cutting the pin into three pieces is the best plan.
Heat. It's not really going to work with propane. You don't get enough heat fast enough to swell the eye without swelling the pin at the same time. Having an acetylene torch with a rosebud tip will cause the "eye" to swell...

Anything at all you could share on how to remove it? Or maybe a picture or two? Seems that every time that I do something like that - pictures of the process get overlooked...

Possibly the box like this?
From the TM, TM 5-2420-224-24P-2 posted here on the site. PDF Page684, 0360 00 is the page number in the document.
Chances are after re-reading what you asked, this might not be it - but if we can figure out what the box might be called - maybe it will be in...

Alcohol - Isopropanol has less water content. Goal is to remove the water, so the higher the number the better. Highest I have found is 99%.
Worthy of Consideration: Alcohol dries out rubber. The more you use it, the more the hoses and diaphragms and rubber o-rings in the air system are...

Welcome to the Outfit!
Glad to hear that you have your very own piece of green goodness - and that you got a little snow to keep it gainfully employed! :)
Don't forget that you can hunt down the schematics here and some of the TM's as well. Nice looking truck too!

Couple of fallons of gas in the diesel tank is good to help clean the injectors every now and again. Couple of older than me guys always claimed it needed to be done regular.
Me personally -I don't think I would want to have Gas AND Ether in a diesel startup though...
.
Well good! That will save you some bucks. Pull that baby and give it a good washing. Then when you drain the oil, put it back and let the oil circulate like was already discussed.
No more in the tank that you have to have - and sadly - like the instructions on the back of a shampoo...
.
Just happened to think about it...
Guessing there is a filter in there somewhere? You might want to pull that if it has one. You might get rid of more water that way on the first "flush fill".
If it isn't a paper cartridge type filter, maybe it is a metal strainer and that could be washed...
