A couple questions: Is is possible for you to acquire the engine parts from another source? Why tear apart an engine that already fired up and is at least partly known good?

Starting out with a M1009 is a great introduction to diesels, and auto mechanics in general. Buying a Deuce first is biting off more than you can chew if you don't have any experience working on 14,000 lb trucks with multi-fuel engines.

For the time being, just dump hose water in the radiator. That way you'll easily be able to spot any leaks in the coolant system without watching valuable dollar$ in antifreeze drip out of the truck. You can drain the radiator out later and add antifreeze.
Nice truck! It is definitely worth saving! Hopefully you can talk your grandfather into keeping it and letting you restore it. Tell him it'd be a great project for you to cut your teeth on. Tell him all the lessons you can learn by bringing a military vehicle back to life!
