A brief overview of the air system-
Truck starts. Has no air. Begins building air.

Most likely it got new gauges at reset so what it shows is what's been put on it since reset.
Not all engines were swapped. The data plate on driver side front of engine will tell you if so.

My best guess says your PPV failed and your compressor isn't shutting off. You're hitting 150psi and hitting the pressure relief valve.
The root cause is moisture in the system.
Confirm my diagnosis and replace the PPV as a start....
