    Amy, The MKT should be up and running within two hours of my arrival, which is 'scheduled' for Thursday morning. Especially if I can get some help in setting it up. I can open it up by myself (and close it back up too), but it takes over an hour without help.

    I agree with Clinto, this is voluntary, not required. In addition, if anyone wants to cook their own grub, or thinks an MKT is in their future and wants to practice beforehand.
