It is very easy to take the top off. Roll down the rear window and remove about 14 or so bolts, maybe more around the interior edge and along the cab roof line and whatever trim accessories that might be under the bolts, then pick up the cap using two people, one on each side like a coffin...

It would be a curious swap and the 7.3 is nothing to frown upon. I drove an ´86 with the 3spd slush box and it did fine for what it was tasked. As to the swap itself, you would be looking at the transfer case as an issue. Motor, radiator, and trans mounts all would be custom.

I agree with reading the TM. These trucks have air over hydraulic and have extra parts as a result. I would start with lifting each axle off the ground and see if wheels spin. Then if not you can back off the shoes like normal drum brakes. Also since the master cylinder was dry, there is now air...
There is a French design truck that is out there that came with a flat head ford and conventional transmission/transfer case. It is a unimog looking like truck. As to a flat head or other v6 or v8 engine in front of a 404 unimog transmission I would not expect the transmission to last too long...
