Try a strap wrench? Does less damage but can still apply decent rotational force. Also, tap around circumference of cap, close to edge with hammer several times. Apply penetrating oil, repeat, wait try again...........

Ahhhhhh, plumbing...... persistence gets the job done....PEX is good in many applications, not all.....congrats on the repair. Maybe I should work on my M1009? Lol
