I didn’t realize you were in Grand Junction. I’m in Denver. Going up i70 I’ve only ever been to Georgetown but can’t say I’ve overheated, I’ve had my gauge read about 200 though on the longer climbs. One of these days I’ll test it out heading over vail pass.
The closest I’ve ever gotten to even proper operating temps is long extended climbs in the mountains at 60+mph.
Theres certainly something mechanically wrong here.
I had a similar issue with gates thermostats. Couldn’t get my 09 over 160* all winter no matter what I did. Replaced thermostat again and same issue. Everything has been flushed but seems like my thermostat is staying open or opening earlier than it should. I need to get around to swapping it again.
I know there are factory replacement springs out there that will restore factory ride height. A set of quality shocks should help as well as restoring bushings (unless the springs themselves are shot which is likely at the age of these vehicles).

Maybe your bottle jack is low on oil.
Id keep cranking on it but it’ll probably pop pretty quickly so be ready. As others have said, it’s the center hub that’s stuck so you could heat it up in that area if you’ve got the means to do it.
This is why I suggested him as everything he recreates is excellent quality but some here are quick to jump in with misinformation that isn’t relevant to his products.
