I also agree with you that no one is saying you can't use scrap parts for off road use only. (or on road use)

Without the fording stack, your truck should have a rubber one way "pinch" valve on the bottom of the box.
Was there a clamped pipe cap on the bottom?
The water is probably from hosing it off. Or deep fording without a snorkel.
I'm in the same boat. Replaced the sender stat, and gauge. Still hot (235-240), no boil-over even with the cap off and straight water. I'm stumped.
I shows 185 at the tank, 205 at the top of radiator and 180 on the crossover.
