I think most oil bottles/cans list the temperature ranges that are good for a given oil viscosity.

Just use regular 15w40. You'll be fine.

15w40 is fine. Cold has more of an effect on an engine than heat.

I do not think you can go wrong with any diesel specific 15W40. Most if not all diesel specific oils today exceed the requirements of the original spec oil.
