I think they have you fill at 12:00 just for ease of access. Assuming you just got draining it at 6:00 and you have to turn the wheel to refill then you might as well position it to make it easy, but I think if you're just topping off then having it at 4:00 is fine.
I'm a little confused... do the rear hubs need to be filled separately or do they just get filled by the differential fluid? I was under the impression that as long as the pumpkin is full then the hubs are ok.
When people ask me what I do with mine I tell them, "whatever I want." I got it just before relocating my machine shop and it was amazingly useful. I made about 8 trips with it fully loaded. I love just cruising around in it too. My kids climb all over it and we take it to car shows. It's funny...

Has anyone added a brake controller to their truck? Does the 7 pin trailer plug already have the correct wire for the brake signal? Is there a convenient place to tap into it?
