I use a Hilift on my trailer. It is plenty steady as long as you have the trailer parking brakes on both sides. Without the parking brakes yes it does want to just flop over.

Its actually simpler than that. Just hook on your negative and then hook the positive to the appropriate terminal . If you go between the pos and neg of the first battery even if you have 10 of them in series you still only get 6 volts. 2nd battery 12 volts.. etc

You know you have an 803 as your backup gen when you run around the house trying to find things to turn on to keep a good load on it instead of going around the house running one thing at a time trying not to stall it out.

Probably an easier way to stop it is just to cover the intake hose and cut off the air. Like a runaway diesel you pretty much just have to cutoff any air. Then you wont have to bleed the fuel system like you do running it dry. Then there is always manually moving the fuel cutoff solenoid...
