My A3 without winch tipped the scales at 14,100 without driver and full fuel load. Had to get a weight ticket to register it in Cali. Had to be violated in the rear ($$) for the weight fee because an A3 is too new to be registered as a 'hysterical' vehicle.

Very unusual and there is either something simple being overlooked, like fluid level or there were problems before draining. Something doesn't add up.

The clue is white smoke.
If there was a tranny problem, and the engine was laboring, you'd see black smoke from the loading.
White smoke suggests either a fuel or head gasket issue. Only really seeing the white smoke (volume, smell, how it disspates, etc.) can one tell.

If your filter wasn't tight, you'd be bleeding red stuff, not sucking air. The system is positive pressure and the mess would point to a major leak that would be responsible for the system pressure loss and misoperation. On top of that, you'd bleed out and even more fun as the tranny goes full...
As I recall, TM says refill is 9qts. Most of the fluid is still in the torque converter and cooler/lines/ext filter.
My migration from 10w40 to DexIII was around 8-9 qt drain and then when refilling, once I started it up, it took a lot of fluid to top up to 'full' from the 'full' indicated...
Sounds like trapped air in the valve body. Is it really cold where you are? To properly get things refilled after a change, the fluid needs to flow like water. You may need to let it sit and idle for a good long while to bring the temp up if the ambient temps are really low to get the fluid...
