My position on this is to leave it stock if you ever plan on getting another miltary truck (so you can slave start if needed) and also so we can help you with wiring issues. If you convert it your basically on your own for the starter/charging wiring.
Not an issue at all, I ran my m1008 with stock tires @65mph (almost at the governor) for ~900miles in one day. The rear mains on the 6.2 are two-piece, they are not hard to change at all.

I have yet to see a 6.2 that will start without glow plugs. period... since the glow plugs are not hooked up you could give a small huff of ether to get them started.
Check tire pressures and condition, take a spare (and the tools to change it, including a jack).
Take extra engine oil and check it every time you stop.
I would take an extra set of belts.
For sure take an extra fuel filter.
Take a roll of that radiator hose patch tape (seals a leak if you...
