The adjustable vacuum modulator can alter the shift points. The adjustment screw is inside the vacuum port.

No - the 3/4" feet are smaller all around vs the 1" feet

IIRC the typical trailer weight rating for a pickup step bumper is 3500 lbs.
as well as most other bumper hitches ( pre- 5mph crash bumpers)
If the welds are good I can't see an issue with towing a 2200 lb boat.

318 is internal and 360 is external.
Do not use 318 dampner or torque convertor on a 360.*
*there are after market flex plates with the balance weight that allows the use of a std torque convertor as found on 318's.
Quite possibly the fuel you dumped in the intake (hoping anyway).
I guessing you need to bleed the lines to the injectors, but I don't know 6.2's
