There's quite a few broke dick 1008s coming up on GL right now. Surf around a little and you might be able to find one and have a local SS member pick it up and send your parts and keep the rest for themselves.
I think many would consider taking the axles and engine out of it would be "chopping it up". Not much you can do with an engineless, axleless body at that point. But as has been said, it's your's to do with as you will.

I'm still waiting for the EUC to clear on mine so I don't really have any practical experience but have been told to expect around 20mpg and 60-65mph would be fine. The 1009 is geared much better for hiway speeds than the 1008. I've had more than one person tell me the 1009 is the best road...
With 5.83 (sorry for being off 5/100ths) gears your top speed is going to run about 45mph so if you want hiway speeds you're going to need to change those out.
