There shouldn't be any problems if it drives ok for small trips. I have used mine as a daily driver to work for weeks at a time (85 miles roundtrip) and also taken it on a six hour, 375 mile trip from Moab, Ut to Denver, Co over the Rocky Mountains with no reliability issues.
It sounds like a bad or not re-connected ground strap or wire after the head gasket replacement. There are several that reside on top of and the sides of the motor and might explain the erratic electrical problems.
