I think CPF240 nailed it. In your picture of the starter where you wrote the word flowing is the transmission cooler line. It is on the right side. Right above the starter. Perhaps it chafed through. Clean that and have a look behind whatever that material is that's wrapped around it.
That makes sense. There is a controller for the low coolant light circuit. It probably senses the ground through the coolant. I read up on a few troubleshooting tips. Might just be as simple as a bad bulb.
How does that sensor work on a plastic tank? Does it seek ground through the coolant or the tank itself. Mine never worked even on the copper radiator when it was empty. The TM shows the sensor needs ground. So I'm guessing it needs a jumper to ground. Then figure out why the light never...

I ended doing just that. The glow plug system is completely in stock configuration. Would not start after sitting warm about 30 minutes. I added the button to warm the plugs when the controller does not. 10 seconds and it lights right up.

Your glow plugs pull 70-100 amps at 12 volts. Roughly. That is 840-1200 watts. If your converter can't deliver that much power then the voltage will drop.
