DOT 3 or 4 will look like coffee if its very old. Definitely need to flush it. Don't assume that it's still DOT 5 if the truck has been out of the military a long time.
I used the Chinese made aluminum plastic tank radiator from CARQUEST. Fit was perfect. I used CARQUEST only because my employer has an account there. I changed out the belts while it was out. Also be a very good time to change all your hoses.

Warthog made a good observation regarding the 12 volt power wire. In looking at your pics the 2 buss bars are missing some wires and have definitely been modified.
Wow what a mess. Starting to look like a 12 volt conversion not fully completed. Would explain the disconnected pass side alternator. You will need to peek at the starter and try and find a part number to look up to see if it's 12 or 24 volts.

Looks like the 24-12 volt resistor pack for the glowplugs is missing. I would track down that wire feeding the glowplug relay and see if it is wired to get 12 volts.
That's a good tip, I had not considered the thermostat. When we got the truck the radiator was rotted and what little coolant was left in it was like Alabama mud. Took forever to flush clear. The engine seems cool to the touch even after running awhile. Thermostat is an easy fix.

Dropped a fuel tank and pump into the bed for fueling equipment. Need a new filter though before I can use it. The bowl was half full of water and no filter. No wonder they pulled it out of service.

Ahhh, those are a bear to remove. There is a groove in the yoke and a matching groove in the cap. They squirt in the plastic to lock it in place. Heat it with a torch until the nylon is done oozing out of both sides.
