I believe they are put in a form wet and then dried. You can do this yourself by getting 1x3 inch oak at Lowe's and soaking them in water for a few days, and bending to shape, and let dry for a week or so.
Torn between two data plates for my -725. One is the original, the top one in the pic. Not bad condition but a little faded and some scratched. Bottom one was from mvdataplates.com and is real shiny and new, but the information looks weird, like it was written by hand by a 10-yr-old. ...
I'm not sure how far they are from you, but in Memphis there is Memphis Equipment. Granted mostly they deal in deuce and 5-ton parts, but it's a start....

This is where I would've gotten outta the -715, shook the other truck's owner's hands, and said "Get a real truck."
If you find a M60 wrecker, or a M108, you will either find it has major problems and a fair price tag, or is really nice and costs as much as 2 M816 5-ton wreckers. I wish you luck in your search....
