Best practice is to work on these yourself.
Failing that, you want someone who has experience specifically with these trucks to do the work.
Allowing regular big truck places to work on them results in badness like this. They don't really know any more about them than you do, and they don't...
The M818 pictured in my avatar was modified by the previous owner. Turbo and pyrometer.
It gives up nothing to an 8.3. Even with the 16.00 super singles it sprints up the hills as well as any 939A2 I've driven, even with another truck on towbar behind it. Fuel mileage is 7-8mpg, even with...
Drive both. Form your own opinions ; don't take our word for it (in EITHER direction)
That being said, here's my take -
I've owned and driven bunches of each kind. In 90% of usages there's no substantial difference in performance, certainly not enough to choose one over the other if...
The primary difference is the engine. The AM General has an NH250, and the BMY has an 8.3. The second biggest difference is the presence of CTIS on the BMY. BMY trucks bring a fairly substantial premium (IMO undeserved)
Not every change is an improvement. Opinions vary as to which is "better"...
Tire size really shouldn't play into it, as the system sees pressure and not volume.
I'm inclined to agree with your assessment.
That being said, I'd manually air the tires to 55psi, and adjust the air compressor to 127psi and see what it does then.

If you want to kill a couple of days in Rapid City seeing mt Rushmore and similar tourist traps, I'll run back to KS and grab them. Price is $1300 delivered to Rapid City, and I'll assist you mounting one to...
A day late... I have a set of 6 at 90% in KS and could have met you in Rapid City.
They're still in KS, and I'm in Rapid City....
If you break down, I'll go fetch them and deliver as far as Casper or therebouts.
And then one fine day you'll be running down the highway at 60mph and the CTIS will decide it's a traction impaired surface and dump the air out of all 6.... bouncy bouncy bouncy. And maybe a sidewall goes boom.
You can adjust your steering stops, but that costs you in terms of turning radius.
My personal opinion is dump the CTIS and use the hemtt wheels if you want to run the 16's.
Until you're comfortable doing in depth work on it, I suggest just keeping a close eye on it and topping it off as necessary.
However, if it wasn't leaking before you changed the fluid, it's likely something you did as noted by kapkan...
Having done several moves involving households and military trucks, here's how I'd do it -
Load the 5ton to the gills. Drive it to destination. Go back and move the rest of your stuff by other means as if you didn't have a 5ton.
*If* it makes the difference between getting it all in one trip...
