There are three fasteners holding the pump to the block, just like cucvrus said. They are 120 degrees from one another. One on the top and two on the bottom. One on the drivers side, one on the passenger side.
Just mark the position of it and remove the screws. The position of that vacuum switch is important. It is for the transmission, you want to clock it back to the exact position you found it when you install the rebuilt pump
Looking good. Paint remover works well on gaskets. Scrape off and vacuum up what you can with a scraper and razor blade. If there are stubborn spots brush on some good paint remover ("Dad's" is good stuff).

Depends. If you live in Kansas and run around where it is flat you can get away with no trimming. Otherwise the amount of trimming is going to depend on a few things.
1) tire size
2) wheel back spacing
3) bump stop location

It isn't that bad. 4 hours of your life if you have done it before. 6-8 hours if you have not. Swapping the injection pump isn't that bad.

Braided stainless hose is another option, in conjunction with some AN fittings. Jegs and Summit both sell braded hose that will survive hot ATF for a long time. I think I used -06 sized hose on mine.
One more question. Why do you want to run 3" spacers? 2" spacers will work.
Crossover with hydraulic assist is fantastic. If you want to do it on the cheap it is not that difficult to take apart your steering gear to drill and tap it. I have done a couple, it really isn't that bad.
