Tie a rope through the rim, climb up in the bed with the gate down, use your legs and pull up. Once you get the tire past the tail gate, it's pretty easy to snatch with one hand and finish pulling it in.
How are the HEMTT's adapter plates assembled? They could be just a little bit off, causing a bounce. If bolted on, they may be able to be moved just a hair to correct the problem.
Yes, it's true flipping the rear hubs would give you the proper offset for the front. And yes, you could get it done in 8-10 hours...if you are EXTREMELY slow. Use the search function, do some reading on flipping the hubs, and go to town.
