the dashpad is the same from any chevy truck or full-size blazer from 1977-1987. you should be able to find a decent one in a junkyard, or you can get a repro.
I bet you have a bad gauge, but I wouldn't be running that truck until you got a real gauge on it. If a oil passage is blocked you could be building that much pressure.

There are two rubber hoses on the passenger side of the injector pump, check that they are not rotted (I'd just replace them) also check the lines on the vacuum pump (where the distributor would be on a gasoline chevy).

it may have, but dont be worried, a few revolutions of the engine shouldnt cause it to drop into the chamber.
Ah that switch. Its going to be fun finding out what the parts store "calls" that switch in the computer. your best bet would be to call a dealer and have them look up the part number...
before you go throwing parts at it, let me see if i understand what your describing.
You start driving the truck around, when you reach 35mph the truck does not shift, you then give it more pedal and the truck shifts?

If you are talking about the switch for manual operation of the glow plugs, just tell them you need a momentary-on pushbutton switch. It doesnt have to be that heavy duty (just operates the relay), but the HD switches (all metal) tend to last longer.
RE: battery
for a cucv in any temperate climate, you will need at the bare minimum 750cca's on each battery. I'd suggest if you are going with civilian batteries to get 950's.
