The first couple of items you were wondering about are:
1) the one with little chains on it is to hang in the ovens for baking purposes
2) the one with the oblong cut outs is to sit in a pan of hot water and hold the inserts from mermite cans to keep them warm
If you want a cab reinforcement plate they are available in the classified section. I don't imagine there would be an issue shipping to Canada other than the price.
It would be informative if someone would show a step-by-step install of the reinforcement plates. Mostly all you hear or see is "lots of drilling." The OPs demonstration of the "fork trick" was good information.

The M1010 was simply a 1 ton cab/chasis that the ambulance body was added to so yes you can use a regular one. You'll need to remove the rear window of course then cut the cab back for the walk thru door. I'm not sure about reinforcing the cab after the cut or how you'll seal the area between...
I know that thtrev2001 has 1 or 2 griddles for sale but the shipping might be cost prohibitive unless you can utilize the SS Express. I have 3 (2 on trailer and 1 spare) of which one is warped a bit. I wonder if they had someone throw cold water on the hot griddle. Not sure if that'd be enough...
I removed the center bracket on my trailer and put my license plate there. While the other reasons for removing them are valid I'm kind of stubborn about things and like the look of the trailer with a couple of cans on it (plus I already have the rear travel cover). Makes it look more authentic.

Actually price is $69.95 (+ $12 shipping). OUCH! I've found Columbia Electronics tends to be at the upper end of the price range but it is a new cable. I think I'll save that as a last resort if I can't get the GRC cable cheaper.

The correct cable is a CX-10613 power cable (battery to MX-7777). The one wsucougarx used is modified from a GRC-106. It has the same plug end as the 10613 and you just change the end the hooks to the battery.
