After you figure the weight of a knuckle boom and a load of logs, I think you'd want a 5-ton. Just the log bunk should do fine. My cousin has a M35A2 with a set of log bolsters on it. He said about 1,000 ft of logs is all you wanted on it.
TSC has the tubes with the reinforcement ring already welded on and the hole for the pin drilled. I think I gave something like $25 for the last one I bought there.
Northern Tool has them from $12 to $44 depending on the length you need.

You should cage the chamber whatever side you are working on. DH is correct about the new chambers being non-serviceable on the sprig brake side. The ones I've seen still let you service the non-spring side though. I've been keeping all the old style chambers I can find because it's much cheaper...

Booger, Hyd winches are much more controllable and therefor safer. They also eliminate the need for a shear pin. If you've ever ran both you'd understand. Hyd winches are smooth running.
