Like WM said, I'd go with air ride if I was going to do something like this. Your off road performance will suffer though if you do away with the stock suspension.

Yes, water injection is a common mod to a diesel.
The main thing with water injection is to have a good regulation of flow. Too much water injected and things can go really bad.
I think there are some pics floating around here where somebody has done it.
It would be fairly easy but you're going to have to watch your driveshaft angles and find a new place for your fuel tank and spare.

Most flatbed trucks are set up 60% in front of the axle and 40% behind the axle as this is considered the ideal bed placement. The problem is deuce is already almost 50/50. I'm afraid if you move the bed back any you'll have too much bed behind the axle and won't balance out well loaded.

I just removed the drain plug and the fill plug, threaded grease gun hose directly onto the drain hole, and filled it until grease came out the fill hole.

Don't mount it on the tailgate. The tailgate or tailgate chains aren't strong enough for this. If you're going to mount one you need to mount it to the bed and add reinforcement under the bed to tie the crane to the cross-members.
