In my experience, if truck is in good mechanical condition with no rust, better off selling it as is. Hard to recover the cost or time of a good paint job. And a bad one will lower value to some buyers.

Back to the service interval, fuel filter/oil level,...clogged fuel fitler, low oil... If you run this as much as you say, if you service oil & filters as to spec,( I know you downloaded users TM) unit will serve you. Otherwise....on an old diesel like this, would check oil level each time...

The installer sounds out of hand to me. They compromised themselves and left you rooted (in the Australian use of the word) over a $2-300 windshield installation. If they were going to walk, they should have put everything back as it was. You have legitimate complaint.

30 to 60 seconds glow plug when not warmed up helps in most weather. But agree it sounds more like fuel issue. How often do you change the fuel filters? (and oil for that matter) I know you run this a lot, 100 hours (recommended service interval) adds up pretty quickly with daily use.
It is a pulnger switch, usually white, plastic, two wires. It is in contact with back of brake pedal lever, (curved metal bar that pedal is attached to). Not much to it and the same as lots of other cars and trucks.
Low coolant light just went on in one of my 1008s for no reason. Good fluid level, no leaks. I suspect the low coolant module under the dash or the sensor itself. Will check it out when not so busy.

Besides a few wiring changes, one to protect VR, it says to use break in oil for the first 100 hrs after motor rebuild...
Am pretty sure the 003 motor was not designed for side load of belt. Often industrial motors that are have ball bearings on output shaft. It is a pretty tough motor, so it might be OK, or you could try to fit in a pillow block on back.
