The general advice I give in these situations is to run it as you need to then load bank it when you have time. This stuff doesn't happen in a few hours. The more load you do run on it the slower it happens.

+1 with what zanther said. You can't do an auto transfer to generator power if the generator isn't rated for the connected load. You'll need auto load sheading or you'll be limited to a manual transfer switch.
The first thing to do is not trust the gauges and use a meter to verify all the parameters (V, A, HZ) independently.
Thats a big help to reduce chasing your tail.
Go ahead and go through the manual so you have a good understanding of how they work while you wait for it to arrive.

You'll need a pretty hefty alternator if you do a DIY. Normal equipment alternators are in the 35a range and won't be nearly powerful enough.
I use cheap lawnmower batteries for testing purposes. Totally agree that I wouldn't rely on them for starting in service. They don't last long even when treated with care.

I have both a EU1000 and a EU3000 generators. I bought the 831 specifically because it does 240v. I wanted a generator that could run my well pump with minimal fuel burn. It has greatly exceeded my expectations.
However I've not lost any love for the Hondas. They have both served me very well...
I doubt it will start an AC unit that size. The max you should run on it is about 3.2kw. These do not have nearly as much overload headroom as the other 80x machines.
Edit - I use mine when minimal power is needed. It works great to keep the lights and the fridge on. It will run my well pump...
One thing to remember is that you can't use an ATS in a application where the connected load is higher than the generators capacity. To be code compliant you will have to have an automatic load shedding system to reduce the connected load to less than what the generator can handle.
