You should have the cooling system pressure tested (or do it yourself if you have the equipment). By pressurizing the system you can find vacuum leaks, that wouldn't drip under normal operation.
ORD (Off Road Design) is a great place from what everyone has said. You don't need to worry much about the 5/4 ton rating. It's rated 5/4 ton because they added a couple extra leaves in the rear spring packs, otherwise it's nothing special when compared to a K30.

They Goodyear Wrangler RT2 are 36x12.5R16.5 They are the older bias ply tires used on the Humvee (replaced by 37x12.5R16.5 Goodyear MT radials). They measure on the smaller side (the ones I had were about 34.5")
What's wrong with the engine in the truck? (If it has one). Something relatively minor and just needing a rebuild? Or a thrown rod/snapped crank? It may be more cost effective to take the engine to an engine shop, and have it properly rebuilt if it's something on the minor side.
Steel 6-bolt wheels are everywhere. Chevy used the same 6-bolt pattern on Suburbans, K5 (Blazer/Jimmy), and 1/2 ton pickups for decades. Although, I believe the stock K5/K10 size was 15x7.
