Toyo MT 255 85 16.... they ain't cheap, but the sidewalls will support the weight of a M1031. I run those tires on a 79 K20 on the factory 16x6.5 wheels with zero fender rubbing.
Sounds like the wrong lift pump is on the engine...
Go back and check which mechanical lift pump was put on the engine. If it was Delphi MF30030, then it is the wrong lift pump.... been there done that with the same issues you are having.
The CORRECT lift pump is Delphi CHFP906. I swapped that...

My 86 M1008 has the same issue... and it can be a few things or a combination of:
Sagging springs
Worn out shackle bushings
Damaged shocks
Bent axle housing or knuckle
On mine we installed new rear shackle bushings and shocks which cleared up most of it...
My 86 m1008 has low compression and it takes longer to warm up to 145 degrees... and that's as high as it'll go. There's still enough heat in the cab to keep me warm in the winter.
I don't have a separate temp gauge on the 85 m1008, but that thing will roast me out of the cab in the winter😛
I have noticed one thing with the D'max filter conversion; it does not start as quickly as the original unit. Especially warm restarts. My 04 GMC D'max truck never started as quickly as my 6.2 diesels with the factory fuel filter. Idk🤷♂️, but they start and that's all that counts..
What everyone else said; change the balancer. It may look okay, but that's 35yr old rubber that's hard and dry. Old balancers kill these engines. A new balancer is cheap insurance for a 6.2 diesel.
** make sure you have the correct lift pump so you do not have to do it twice. Delphi CHFP906 is the correct lift pump. MF30030 is not the correct pump even the parts houses will tell you it is...
