It won't necessarily burn out the field, but it will eventually damage the voltage regulator and or the bridge rectifier board. Because as you said, it's trying to pump too much current into the field to make the voltage

You'll need a cheap 1 gallon garden sprayer from your local hardware store. I used about 3 feet of 1/4" nylon hose rather than the hose that came with the sprayer.
Some small spring clamps for the hose.
1/4" barb to 1/4" NPT fitting
Fittings to go from 1/8" NPT to 1/4" NPT

When you say you are putting your thumb over the port, are you putting it on the compressor side?
If that is the case, only 3 things I can think of would cause an issue like you are having.
1, the governor is not working and or set properly
2, the unloader on the compressor is sticking
3...
